Jamie's Stem Ginger Cake
         Easy Affordable

Ingredients
100g/3 ½ oz butter
80g/3oz molasses sugar
1 tablespoon golden syrup
75ml/2.5fl oz full fat milk
1 large organic egg
150g/5½oz self-raising flour
1 teaspoon ground ginger
2 tablespoons stem ginger in syrup, finely chopped
  Melt the butter, sugar and golden syrup in a pan over a low heat and then set to one side to cool.
Mix together the milk and egg, add the cooled butter mixture and stir in the flour and the stem ginger.
Pour the cake mixture into the mini loaf tin mould and bake for 35-40 minutes until risen and golden.
Then remove from the oven, and leave to cool in the mould for about 10 minutes before turning out.


Delicious served with stewed rhubarb and crème fraiche, but I love it buttered with a nice cup of tea!
