Ingredients
400g/14oz digestive biscuits
200g/7oz pecan nuts, roughly chopped
200g/7oz pistachio nuts, roughly chopped
50g/1¾oz Glace cherries, roughly chopped
50g/1¾oz dried apricots, roughly chopped
310g/11oz butter
2 tablespoons golden syrup
2 tablespoons caster sugar
400g/14oz good quality plain chocolate
3 tablespoons cocoa powder
Break the biscuits into small pieces directly into a large bowl. Then add the nuts, cherries and apricots.
Put the rest of the ingredients into a heatproof bowl and place on a low heat over a pan of simmering water until melted. Stir together.
Mix the contents of both bowls together and spoon the mixture into the mould, pressing it all down. Cover with cling film, and chill in the fridge to firm up for at least 2 hours.
Once chilled, turn out onto a plate or board, dust with sifted cocoa powder and serve in pieces.
