Ingredients

  • 4 pears (not too ripe)
  • 50g caster sugar
  • 250 ml red wine
  • 2 tbsp (30 ml) lemon juice
  • 2,5 cm stick cinnamon or 1/2 tsp (2,5 ml) cinnamon
  • 25g flaked toasted almonds

Preparation

Peel pears, leaving them whole and keeping the stalks on.

Remove the trivet and stand the pears upright in the base of cooker. (This is easier if you trim the base of the pears flat).

Sprinkle with sugar.

Pour in the red wine, lemon juice and cinnamon.

close the lid and bring to pressure.

Cook gently for about 10 minutes. The exact time will depend in the size and ripeness of the pears.

Release steam slowly.

Lift pears out of pan and stand upright on a serving dish.

Remove cinnamon stick.

Boil liquid until it is reduced by about half and become slightly "syrupy".

Pour red wine sauce over pears.

Sprinkle with almonds and serve with whipped cream.
