Ingredients

  • Smoked gammon joint (soaked overnight) (750g – 2 people) (1kg – 4 people) (1.25kg – 6 people)
  • Whole peppercorns (2 – 2 people) (4 – 4 people) (4 – 6 people)
  • Dried bay leaf (1 – 2 people) (1 – 4 people) (2 – 6 people)
  • Demerara or brown sugar (15g – 2 people) (25g – 4 people) (25g – 6 people)
  • Whole cloves (1 – 2 people) (2 – 4 people) (2 – 6 people)
  • Water (400ml – 2 people) (500ml – 4 people) (500ml – 6 people)

Preparation

2 people = 5 min preparation and 40 min cooking time

4 people = 5 min preparation and 45 min cooking time

6 people = 5 min preparation and 55 min cooking time

Cooking pressure = high

Pour in water. Place cloves, peppercorn and joint in bowl. Place bay leaves on top of joint and sprinkle over sugar.

Rest for 10 minutes. Trim off any fat. SERVE!
