  • 8 tomatoes
  • 1 red pepper
  • 2 red onions
  • 2 teaspoons of ground cumin
  • 1 teaspoon of chilli powder
  • 1 teaspoon of cumin seeds
  • 400 g kidney beans
  • 100 g baby spinach leaves
  • fresh parsley
  • 20 g cheddar
  • 1 tablespoon of olive oil
  • salt and pepper


Cut the tomatoes into quarters. Finely chop the pepper and the red onions.

In the pressure cooker, heat the oil and fry the onion for 5 minutes at a medium heat.

Add the spices and mix.

Add the tomatoes and pepper and cook with the lid on for 10 minutes.

Add the kidney beans and cook for 5 minutes without the lid.

Add the spinach and cook for 2 more minutes.

Season to taste and serve the chilli with grated cheddar and rice and sprinkle with chopped parsley
