Ingredients

  • 100g self raising flour
  • Pinch of salt
  • 25g caster sugar
  • 1 egg (medium size)
  • About 150 ml milk
  • Cooking oil, to fry

Preparation

Sift the flour and the salt into a large bowl. Stir in the caster sugar. Make a well in the centre and add the egg plus half the milk. Mix to from a smooth batter.

Beat in the remaining milk to obtain a fairly thick batter.

Add more milk if necessary.

Heat a little oil in a Tefal non-stick frying pan. Drop tablespoons of batter into the pan about 5cm apart. When bubbles appear on the surface and the mixture sets, turn and cook the other side until golden brown.

Cook the remaining batter in the same way. Serve either hot or cold, spread with butter and jam. Makes about 10 - 12 pancakes.
