  • 100g peeled and stoned very ripe mango, chopped
  • 250g frozen mixed summer fruits
  • 100g caster sugar
  • 200ml water
  • 4 tbsp Cointreau, optional
  • Vanilla ice cream, frozen fruits and mint, to serve


Place mango in the base of the Soup-Maker. Top with summer fruits, 25g of the sugar and 100ml of the water. Choose the Compote setting. Uncover and stir in remaining sugar until dissolved.

Pour into a jug and allow to cool. Stir in Cointreau (optional) and remaining water and chill.

To serve: spoon over vanilla ice cream, frozen fruits and decorate with sprigs of mint.

Suitable for freezing.
