Sweet Summer Pea, Broccoli, Mint & Ricotta Soup

  • 2 sticks celery, chopped
  • 300g tender stem broccoli, roughly chopped
  • 2 cloves garlic, chopped
  • 200g peas, fresh or frozen
  • 100ml white wine
  • 650ml good vegetable stock
  • salt and freshly ground black pepper
  • 2 tbsp fresh chopped mint
  • 100-150g ricotta cheese
  • pea shoots and fresh mint leaves, to garnish


Place the celery, broccoli, garlic, peas, wine and stock in the Soup-Maker. Season. Choose the Creamed Soup setting.

Uncover and stir in mint and season to taste.

Meanwhile warm four soup bowls. Divide the soup between the bowls and top each with dollops of ricotta cheese, pea shoots and fresh baby mint leaves. Season and serve with herby garlic toasts.

Suitable for freezing.
