  • 3 aubergines, diced
  • 2 courgettes
  • 2 medium-size potatoes
  • 2 sweet peppers
  • 2 garlic cloves
  • 1 Actifry spoon of olive oil
  • 250g low fat yoghurt
  • 1 glass tomato juice
  • 1 medium-size tomato, diced
  • 1 tbsp balsamic
  • 1 tsp salt
  • 1 tsp sugar


Adjust the machine to 35 minutes, fry the tomatoes for 15 minutes in olive oil together with 2 garlic cloves.

Then add the aubergine and courgette to the machine continue to fry for 10 minutes more. Finally add the peppers and fry for 10 minutes.

Take all of the fried ingredients in a large deep bowl, crash the garlic cloves fried in the machine in 250g yogurt and add this mixture onto them. Prepare first the fried vegetables and yogurt mixture, then pour the sauce prepared with tomatoes on them. You may decorate the salad with chopped parsley.
